Recipe: Ricotta and smoked salmon puff pastries.

Making your own homemade ricotta is very quick and easy. It's even easier than making soup and almost impossible to mess up using the right milk and the right implements. And the flavor... what about the flavor! Nothing compares to that of homemade cheeses.
But what to do with this ricotta once prepared? With the arrival of spring, we want to change a little of the lasagna recipes that we love. That's why we offer you a simple recipe for smoked salmon puff pastries.

Smoked Salmon Puff Pastry Recipe

Ingredients for 4 puff pastries:

- 4 squares of puff pastry, approximately 7 cm x 7 cm
- 1/4 of the homemade ricotta with 4 L of milk (about 125g)
- 4 slices of smoked salmon
- 1 small bunch of chives
- chopped garlic
- a pinch of salt and pepper
- 1 egg yolk

Instructions:

1. Preheat oven to 400ºF.
2- On a baking sheet, place a sheet of parchment paper. Then place the squares of puff pastry. Refrigerate them.
3- Prepare the filling: Cut the smoked salmon into small pieces, thinly slice the chives and mix these ingredients with the ricotta, garlic, salt and pepper.
4- Remove the squares of puff pastry from the refrigerator. Place 1/4 of the filling on each of the squares of puff pastry in a diagonal, without going to the corners. Bring the other two corners towards the center to cover the filling as in the photos.
5- Brush the pastries with egg yolk and bake them for about 20 minutes while remaining careful that they do not burn, the power of your oven can modify the cooking time.
6- Remove the puff pastries from the oven, let cool for a few minutes and enjoy!
